Dr. Kathy Greaves, an accomplished Nutrition Scientist, brings technical expertise in dietary protein, nutrient metabolism, and women's nutritional needs. She has experience in clinical trial planning, development and conduct. Holding a PhD in Nutrition Science from the University of Arizona, she also earned a MA in Exercise Physiology from the Ohio State University and a BA in Psychology from Hiram College. Her post-doctoral work was done in the Department of Pathology at Wake Forest University. In addition to her industry contributions, Dr. Greaves is deeply committed to education and fostering the next generation of professionals. She teaches both undergraduate and graduate courses in Research Methods and a Nutrition & Healthy Aging course, and has taught undergraduate and graduate level courses in Nutrient Metabolism. Founder of Nutrition Outside the Box, LLC, she integrates Nutrition, Consumer, and Food Sciences to create health-focused, appealing foods, embodying her dedication to advancing nutritional science and education.

Dr. Caroline Webber is an associate professor emerita of nutrition and dietetics in the Department of Family and Consumer Sciences and currently teaches one course in food, nutrition, and climate change. From 2005-2020 she served as dietetic internship director for °ÄÃÅÁùºÏ²Ê¹ÙÍøÖ±²¥â€™s dietetic internship program and taught clinical and community nutrition. Dr. Webber, an RDN with 12 years of clinical and community dietetic experience, earned a MPH from the University of Minnesota School of Public Health and a PhD (nutrition) from Cornell University. Dr. Webber holds a B.S. in nutrition and clinical dietetics (University of California, Berkeley) and a B.A. in sociology (Kirkland College). Her research combines her interests in social sciences and community nutrition. It has focused on the intersection of food security and sustainable food systems. She is currently involved in research concerning food and nutrition students’ knowledge of sustainable food systems in this emerging professional field.
